NUTRITION is about how things work – How WE work – How we connect to our external environment, speak to it, allow it to speak to us, and then translate these connections into cells, tissues, organs and bodily systems. Nutrition creates structure and structure determines function. What we eat, determines how we function. It’s that simple. Or is it? Not everyone is interested in healthy eating. In fact, not everyone is interested in food at all. Our food and lifestyle choices are constantly under influence, and many of us carry a natural optimistic bias leading to a belief that we are less at risk, than our neighbour, for chronic illness and disease. Nutrition is a very complex, intimate, and mysterious way of not only communicating with the world around us, but understanding and functioning within it. As our environment changes, we change, and as we change we must adapt. Nutrition is science. Nutrition is language. Nutrition is art.
